16 Ways to Serve Rice or Beans

Let's face it.  Beans and rice are a practical, economical meal.
I've eaten my share of beans and rice, believe me.  So here's a myriad of tasty ways to use them!

~Serve them with salsa, guacamole, sour cream and Organic blue corn chips.

~Melt cheese on mashed, seasoned pinto beans for a chip dip.

~Make them into burritos.

~Use beans in taco salad and chili.

~Use rice, carrots, basil, and red or sweet onion to make cold salad, just be sure to mix it with olive oil, or a nice dressing.

~Use beans to make little economical snack pancakes:
Mix 1/2 c. cooked pinto or little white beans with 1 egg and salt, in a food processor.  Add in whatever seasonings or spices you like!   Process till smooth.  
Drop onto heated, greased skillet by spoonfuls.  Cover them as they cook. Flip when one side is golden. Turn off heat while the other side of the pancake finishes cooking.  Enjoy with butter.

~Make black bean brownies or chocolate cake with beans.
At one of our church potlucks a young girl brought a delicious cake that actually had black beans in it!
It was so good.

~Serve black beans with extra virgin olive oil and salt.  I know this sounds crazy, but it is very good and it gives you that good fat in your meal.

~Use assorted beans and rice in soups and stews.

~Use rice to make rice pudding.

~Use rice and even beans in stir-fries.

~Mix rice and beans with garlic, onion, cumin, pepper, olive oil and salt for a Costa Rican flavor.

~Add turmeric to rice and chicken for added color and anti-inflammatory properties.

~Make a bean salad

~Mix chopped sweet onion, chopped cilantro, a little olive oil and sea salt and use as a condiment on your beans and rice.

~Mash pinto beans and season to taste for your own version of "refried"
